Let’s make every celebration sweeter with the special Rainbow cake from Treatwell. This is a cake about happiness, peace, and equality. There is nothing sad about rainbows and all those beautiful colours in harmony together.

INGREDIENTS:

CAKE

  • 2 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup Butter, softened
  • 4 large Eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • Red, orange, yellow, green, blue and purple gel food color
BUTTERCREAM FROSTING
  • 2 cups Butter, softened
  • 6 1/2 cups powdered sugar
  • 1/4 teaspoon salt
  • 1/3 cup Heavy Whipping Cream
  • 1 tablespoon vanilla extract
  • Red, orange, yellow, green, blue and purple gel food colour

DIRECTION:

  • Heat oven to 350°F. Grease and flour 2 (8-inch) round cake pans or spray with baking spray, then set aside.
  • Combine flour, baking powder and 1/4 teaspoon salt in bowl  and set aside.
  • Beat granulated sugar and 1 cup butter in another bowl at medium speed, scraping bowl occasionally, until creamy. Add eggs, 1 at a time, beating well after each addition. Add 1 tablespoon vanilla and mix well. Add flour mixture alternatively with milk, beating at low speed after each addition, just until mixed.
  • Divide batter evenly among 6 bowls with about 3/4 cup each. Tint cake batters red, orange, yellow, green, blue and purple. Spread red and orange batter into prepared pans. Bake 8-10 minutes or until toothpick inserted into centre comes out clean. Cool 3 minutes after-that  remove from pans to cooling rack. Cool completely. Meanwhile, wash pans; grease and flour pans. Repeat with remaining colours until all cake layers are baked.
  • Beat 2 cups butter in medium bowl at medium speed until creamy. Gradually add powdered sugar and 1/4 teaspoon salt alternatively with whipping cream and 1 tablespoon vanilla, beating at low speed until well incorporated. Beat at medium speed until smooth and creamy. Remove 2 cups frosting; set aside. Divide remaining frosting evenly among 6 bowls with about 1/3 cup each. Tint frostings red, orange, yellow, green, blue and purple. Set aside.
Assemble: 
  • Place purple cake layer onto serving plate, bottom-side up. Frost top with 1/4 cup white frosting. Place blue cake layer over frosting; frost with 1/4 cup white frosting. Continuing adding green, yellow, orange and red layers in that order, frosting with 1/4 cup white frosting between each layer. Frost outside of cake with remaining white frosting. This layer of frosting will be thin and cake will be visible through frosting. Once frosted, refrigerate cake 30 minutes.
  • Place each tinted frosting into individual resealable plastic food bag; push frosting to one corner. Cut off 1/2 inch from tip of corner. Place 18-inch-long piece of plastic food wrap onto counter surface. Pipe each colour onto plastic wrap to form wide 12-inch horizontal lines (using all of frosting) that are touching.
  • Finally, gently roll frosting lines into one large log using plastic wrap. Snip tip off one end of plastic wrap. Place cut-side down into piping bag fitted with size 1M open-star tip. Pipe rainbow rosettes onto cake beginning with middle of top of cake and working out and down sides so the most vibrant colours are on top of cake.

INGREDIENTS

  • 3 ½ Cup flour
  • 4 Teaspoon baking powder
  • ¾ Teaspoon salt
  • 1 Cup butter (softened, 2 sticks)
  • 1 Cup sugar (granulated)
  • 3 Eggs (well beaten)
  • 1 Teaspoon vanilla extract
  • 3 table spoon orange marmalade
  • 2 Table spoon orange zest (grated)
  • 1 1/3 Cups orange juice
Frosting
  • 3 Cups confectioner’s sugar
  • 4 Table spoon butter(softened)
  • ½ Teaspoon vanilla extract
  • Pinch salt
  • 3 to 6 Table spoon orange juice

DIRECTIONS

  1. Heat the oven to 350 degree F.
  2. Butter a 9*13*2 inch baking pan then dust with flour.
  3. In a bowl, combine the all-purpose flour, baking powder, and salt; stir to blend the dry ingredients thoroughly.
  4. In a mixing bowl, cream the 1 cup of softened butter until smooth. Gradually add the granulated sugar and beat until light and fluffy. Beat in the eggs, one at a time, beat well after each addition. Add the 1 teaspoon vanilla, marmalade and orange zest; beat until well blended.
  5. Beat in flour mixture in three addition, alternating with the orange juice and ending with the flour mixture, beat well after each addition.
  6. Turn the batter into the prepared baking pan and spread evenly.
  7. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Cool completely before frosting.
ORANGE BUTTER FROSTING
  1. Sift the confectioner’s sugar into a mixing bowl.
  2. Add 4 tablespoon of softened butter, ½ teaspoon of vanilla extract, a pinch of salt, and 3 table spoon of orange juice.
  3. Beat until smooth
  4. Add more orange juice, 1 to 2 teaspoon at a time, until the desired spreading consistency is reached.
  5. Frost the cooled cake.

INGREDIENTS

      • 1 ½ Cup of all-purpose flour

      • ½ cup cocoa powder

      • 1 ¼ teaspoon baking soda

      • ¼ teaspoon kosher salt

      • 1 cup plus 4 tablespoon granulated sugar

      • 1 cup plus 4 tablespoon sour cream

      • 2/3 cup vegetable oil

      • 2 large eggs

      • 1 teaspoon vanilla extract

      • 50 oreo biscuits

      • 4 ½ cups heavy cream

      • 2 tablespoon granulated sugar

      • 1 table spoon vanilla extract

    DIRECTIONS

        1. Preheat oven to 350 degree F, then line bottoms of 9 inch cake pans with parchment paper and lightly coat the insides with non-stick pan spray.

        1. Add and mix flour, cocoa, baking soda and salt into a large bowl then set aside.

        1. In a medium bowl whisk together sugar, sour cream, oil, eggs, and vanilla until smooth.

        1. Whisk wet ingredients into dry until smooth then Divide batter evenly between prepared cake pans.

        1. Place pans together on one oven rack and bake about 25 minutes, until cake is just firm and toothpick inserted into centre comes out with moist crumbs.

        1. Let cake cool in pans for 15 minutes, then run a butter knife around the edges to loosen. Invert onto a wire rack, peel off the parchment, and return cakes right side up about 1 hour.

      For the oreo whipped cream:

          1. Carefully cut 6 oreo cookies in half and set aside. Chop remaining cookies into ¼ inch pieces then set aside.

          1. In a bowl whip 2 cups cream until thick and fluffy.

          1. Transfer to a large bowl place in refrigerator.

          1. In a mixer bowl whip 2 ½ cups cream, sugar, and vanilla until thick and fluffy.

          1. Mix sweetened whipped cream into already whipped cream.

          1. Transfer 1 whipped to a small bowl and refrigerate until ready to decorate cake. Mix chopped oreo into remaining whipped cream. Then,

          1. Assemble the cake by layers of cake and whipped cream. Refrigerate cake to let cookies soften, about 2 hours.

          1. Re-whisk reserved whipped cream and transfer to a pastry bag fitted with star tip. Pipe 12 whipped cream around rosettes around perimeter of cake and garnish with reserved oreo cookies halves.

          • 1 1/4 cups (280g) unsalted butter, at room temperature
          •  Melted Butterscotch chips 11oz
          • 719g powdered sugar
          • salt 1/2 tsp
          •  cream or milk 1/2 cup

        Instructions:

        Preparing the Butterscotch Cake Batter
        • Preheat your oven to 350°F (176°C). Grease three 8-inch cake pans and line the bottoms with parchment paper circles.
        • In a medium-sized bowl, combine the all-purpose flour, butterscotch instant pudding mix, baking powder, and salt. Set aside.
        •  Beat the unsalted butter, packed light brown sugar, and vegetable oil in a large bowl until light and fluffy.

        INGREDIENTS – RED VELVET CAKE
        1. 1 cup (240g) buttermilk, room temperature
        2. 1 tsp. vanilla
        3. 1 tsp. vinegar
        4. 1 oz red food color( At Treatwell we use Natural Food Color)
        5. 2 cups (450g) granulated sugar
        6. 1 cup (224g) vegetable oil (can use olive oil)
        7. 2 large eggs room temperature
        8. 2 1/2 cups (320g) cake flour
        9. 1/4 cup (32g) good quality cocoa powder
        10. 1 1/2 tsp. baking powder
        INSTRUCTIONS
        1. Heat oven to 350°F. Prepare three 8-inch round baking pans by spraying with baking and lining with parchment or spreading and lining with parchment.
        2. In a 2 cup measuring cup (or medium bowl) pour buttermilk.
        3. Add the vanilla, vinegar, and red food color to buttermilk and whisk to fully combine. Set aside.
        4. In a large bowl add sugar, oil, and eggs and whisk together by hand until it is smooth and light yellow.
        5. Add cake flour, cocoa, and baking powder to the sugar mixture and whisk until just combined.
        6. Now add the buttermilk mixture and whisk until just combined. You do not want any lumps, but I do recommend being gentle with this batter.
        7. Pour about 1 3/4 cup batter into each pan and bake for 22-32 minutes. When using my convection oven I will bake these at 325°F for 22 minutes. The cake is done when it does not appear wet on the top and if you press your finger gently in the center of the cake it feels firm.
        8. Allow to cool in the pan for about 5 minutes, then invert onto a cooling rack. Chill cakes until ready to assemble.
        Red Velvet Cake Cream Cheese Frosting
        INGREDIENTS
        • 2 8-ounce packages of cream cheese, softened and cut into small pieces
        • 1/2 c 1 stick, 113g unsalted butter, softened and cut into small pieces
        • 2 tsp. Vanilla Extract
        • 5 cup confectioner’s sugar
        INSTRUCTIONS
        1. Combine all ingredients except the sugar into the bowl of a stand mixer and mix on medium speed until smooth, about 3 to 4 minutes.
        2. Reduce the mixer speed to medium-low and add the confectioner’s sugar one cup at a time. Scrape down the sides of the bowl often.
        3. Once all sugar is added, beat until fluffy, 3 to 6 minutes.
